This year, I’ve been thinking back to the V-Day of 2012, which I spent working at Theo Chocolate. It was my favorite chocolate holiday of the roughly 6 super chocolatey holidays I worked during my year at Theo. They sold this line called The Aphrodisiacs — chocolates with various infusions and inclusions that promised to spark desire. I tempered and molded most of the specialty chocolate bars—these seasonal 1 oz bars sold in the on-site retail shop—so learned to produced most of the aphrodisiac flavors. I loved it. Outside of the “oysters are aphrodisiacs” idea, I hadn’t considered a whole list of beautiful ingredients and flavors in terms of pleasure. It totally changed my relationship to this variously sweet, funny, stressful, sometimes insincere and sometimes incredibly sincere (hello Valentine’s Day marriage proposals!) moment in the year. The food and pleasure angle really gave me a personal in. Now, when I think of Valentine’s Day, I think of ginger, chili peppers, peppercorn, roses, and oysters but we don’t make oyster jam, thank goodness.
