A lot of fruit combinations are lovely, but raspberries and currants together are exceptional. I collect raspberries and Redcurrants all summer from places like The Farm Between, our farm and loads of berries from Omar Fugaro's farm on E. Munger St. in Middlebury (the next town over from here). A light infusion of scented rose geranium (grown in our gardens) at the end ignites this flavor into something heady, something special.

Ever-bearing strawberries with blackcurrants and our rosemary. This flavor reminds me of early August evenings, eating al fresco, a pile of biscuits, a puff of whipped cream, a dollop of this jam and a few fresh berries from the farmers market.
This is a great flavor for nutty, hard cheeses like aged sheep milk and cheddars.

A childhood favorite, I love raspberry jam. I demand that it’s tangy, sweet, luscious (slightly soft set) and always made with either unsprayed local raspberries or certified organic berries.
I do three things with raspberry jam; eat it straight from the jar, swirl it into yogurt or get out the peanut butter jar. Occasionally when I’m craving sweets in the morning, I’ll bake some almond flour muffins filled with jam.

I use this jam in my home kitchen more than any other flavor. I use it every and anywhere I'd use ketchup. Organic heirloom tomatoes (from our home farm Lil To Do at 3343 River Rd New Haven) and Singing Cedars Farm, cooked with honey, lemon juice, urfa biber and silk chili peppers and sea salt. This jam celebrates all that is fruity in the tomato. Heat level on this is medium-hot

Apricot Yarrow Plum Elderflower Jam is apricot forward. The yarrow amps the acidity of the stone fruit while the elderflower hangs in the background providing a round, grassy flavor. This flavor is elegant, light, and approachable; beautiful with fresh bloomy rind cheeses, lil washed rind stinkers and makes a wonderful cocktail mixer.

The grassiness of the lemongrass and the herbal sweetness of the bee balm flowers combine with sweet nectarine and tangy lemon to produce a flavor that screams CANDY. The working elements are lemon shred and nectarine chunks in a nectarine lemon jelly, flecked with bee balm flowers and infused with lemongrass.
