Over time I’ve come to think of the year in 3 movements. Each season gives us specific fruits and a specific amount of time to work with that fruit. Summer is frenzied, spring full of hope and looking forward and winter is luxurious with time and hopefully, rest.

I’ve selected preserves from each season that are versatile in their use, whether it’s making a piece of toast as you head out the door to work, adding blackcurrant plum preserves to a bowl of yogurt or kicking it up a notch and using Pear Lemon Sage White Pepper Marmalade to make a stellar Gimlet, these three flavors are the perfect place to start exploring the range of flavors from V Smiley Preserves.

I am excited to present preserves from 3 corners of summer, the strawberry beginning, the apple interlude and the plum ending. The enclosed preserves rely especially on fruit from Windfall Orchard in Cornwall, VT.

Preservation and cooking is all rhythm. Summer holds its own patterns built mostly with berries and stone fruit but in the middle, the Dolgo Crabapple screams for attention in late August. While I wait for the European plum varieties to ripen, we mill crabapples with rosehips and make my favorite preserve for cheese and savory cooking, Dolgo Crabapple Rosehip.

A celebration of seasonal florals! I developed both flavors after moving to Vermont where I’ve both had ample space for planting out aromatics AND spent my first 5 years here working with plants at a local nursery (with an enticing employee discount, hehe).

Apricot Yarrow Plum Elderflower Jam is apricot forward. The yarrow amps the acidity of the stone fruit while the elderflower hangs in the background providing a round, grassy flavor. This flavor is elegant, light, and approachable; beautiful with fresh bloomy rind cheeses, lil washed rind stinkers and makes a wonderful cocktail mixer.

Nectarine Lemon Marmalade with Bee Balm + Lemongrass is an amalgam. Where with some V Smiley Preserves you can taste all the ingredients in layers, this is a set piece. The grassiness of the lemongrass and the herbal sweetness of the bee balm flowers combine with sweet nectarine and tangy lemon to produce a flavor that screams CANDY. The working elements are lemon shred and nectarine chunks in a nectarine lemon jelly, flecked with bee balm flowers and infused with lemongrass.
